Rack of lamb is special occasion-worthy but simple enough to prepare any night of the week.

Ingredients US Metric

• 1 tablespoon olive oil
• 3 cloves garlic, minced (can sub 1 tsp garlic powder)
• 1 tsp dried thyme
• 1 tsp dried rosemary
• 1 tsp Spicewalla Garlic Herb Seasoning
• 1 (2-pound) rack of lamb
• 1 teaspoon salt
• 1 teaspoon black pepper
• 2 tablespoons Dijon mustard

Instructions

1. Preheat the oven to 425 F.
2. Combine the oil, garlic, thyme, and rosemary and garlic herb seasoning in a small bowl.
3. Use a paper towel to pat the lamb dry. Season it with salt and pepper.
4. Place the lamb in a roasting pan and brush it with the Dijon mustard.
5. Sprinkle the prepared seasoning mixture over the top of the lamb. Press it down into the meat to make a crust.
6. Cook for 14-18 minutes, or until a meat thermometer reads 125 F.
7. Allow to rest for at least 5 minutes before slicing.
